Nuance
じゃ is a spoken short form of では, so じゃないです and じゃありません are for conversation, while ではありません suits writing and formal speech. This pattern is only for nouns and な-adjectives: い-adjectives make their negative with くない (高くないです). Note that きれい is a な-adjective, so it is きれいじゃないです, not きれくないです.
Compared with
AはBです is the positive statement "A is B"; じゃないです/ではありません is its negative.
い-adjectives do not use じゃない. Change the final い to くない instead: 高い → 高くないです.
Common mistakes
Wrongこのかばんは高いじゃないです。
Rightこのかばんは高くないです。
高い is an い-adjective, so its negative is くない, not じゃない.
Wrongわたしは学生ないです。
Rightわたしは学生じゃないです。
A noun needs じゃ or では before ない.
Wrongこの店はしずかなじゃないです。
Rightこの店はしずかじゃないです。

Practice
JLPT style: choose the best answer for ( ).
-
1わたしは先生( )。
先生 is a noun, so the negative is じゃないです. くない is only for い-adjectives, and ない or がない cannot follow a noun like this.
-
2「あの人はアメリカ人ですか。」「いいえ、アメリカ人( )。」
After いいえ you need the negative of a noun, ではありません. です would contradict いいえ, and くありません or がありません do not attach to a noun.
-
3このへやはあまりきれい( )。
きれい is a な-adjective, so it takes じゃないです with no な. It is not an い-adjective, so くないです is wrong.
-
4「今日は休みですか。」「いいえ、休み( )。」
休み is a noun, so "it's not a day off" is 休みじゃありません. です and でした contradict いいえ (and でした is the wrong tense), and くないです is only for い-adjectives.
FAQ
What is the difference between じゃないです and ではありません?
They mean the same thing. ではありません is more formal and common in writing; じゃないです (and じゃありません) are the natural choice in polite conversation.

How do I say "was not"?
Use じゃなかったです or ではありませんでした: きのうは休みじゃなかったです (Yesterday was not a day off).
